Irish Soda Bread

Some Irish soda bread recipes are more like cake than bread. This one is the real deal.

Serve this Irish soda bread with corned beef and cabbage for a St. Patrick's Day treat.

Irish Soda Bread Recipe

Preheat oven to 400 degrees F. Sift flours, baking soda and salt together. Pour into a large bowl. Stir in oatmeal. Make a well in the center. Add buttermilk. Stir together until a soft dough forms.

Turn out onto a lightly-floured surface and knead lightly. Do not overknead. Shape into an 8" round and score an "X" across the top with a sharp knife. Transfer to a cookie-sheet sprayed with nonstick cooking spray. Bake 45 minutes or until the bread makes a hollow sound when tapped on the bottom.

Serves 12.
