Peanutty Cool Whip Frozen Yogurt

Cool whip is the surprise ingredient in this deliciously-rich frozen yogurt recipe.

You've seen cool whip recipes for pies, puddings, trifles, cakes and even cookies. But have you seen a cool whip recipe for homemade frozen yogurt? This is it! And it is downright divine.

Creamy, rich peanut butter is combined with brown sugar, non-fat Greek yogurt and cool whip, then frozen in a frozen yogurt maker or ice cream maker. You won't find a more delicious or decadent low-fat summer dessert anywhere.

Now you'll notice that this frozen yogurt recipe isn't exactly low in calories. That's because the nutritional information is calculated on a realistic serving size. Most serving sizes on commercial frozen yogurt and ice creams are a half cup. Have you ever seen a half cup of ice cream? It's smaller than most kid portions at an ice cream shop. This serving size is a full cup -- generous enough to be satisfying, yet not too much.

Although any kind of peanut butter works fine in this recipe, try to use an all-natural peanut butter, such as Smart Balance. Smart Balance peanut butter has no added sugar, and offers a healthy serving of omega-3 fatty acids, to boot.

This frozen yogurt recipe calls for plain Greek yogurt, because it's thicker than regular plain yogurt. You can find Greek yogurt at Whole Foods or Trader Joe's. Fage makes a nice one in full fat, 2% and non-fat varieties. But if you don't want to make an extra shopping trip, just put a 16 oz. container of regular plain yogurt in a sieve over a large bowl and let it drain in the refrigerator for several hours.

Serve this frozen yogurt sprinkled with mini chocolate chips or sprinkles or a bit of warm chocolate sauce for a decadent sundae that's out of this world!

Cool Whip Peanut Butter Frozen Yogurt

  • 1/3 cup crunchy all-natural peanut butter (such as Smart Balance)
  • 1/2 cup light brown sugar, firmly-packed
  • 1 8 oz. container lite Cool Whip
  • 1 tsp. pure vanilla extract
  • 16 oz. plain non-fat Greek yogurt or plain yogurt, drained

With an electric mixer, beat all of the ingredients until smooth. Pour the mixture into a frozen yogurt maker or ice cream machine and freeze according to the manufacturer's directions. Serve immediately or store, tightly covered, in the freezer for up to 3 days.

Makes 4 generous servings.

Per serving: 421 calories, 17 g fat (7 g saturated fat), 2 mg cholesterol, 58 g carbohydrate, 1 g fiber, 12 g protein, 17% vitamin A, 2% vitamin C, 26% calcium, 24% iron
