Think there is no way to join in the fun without regretting it the next day or gaining weight? It does not have to be that way. Anyone can enjoy mouth-watering dessert. The secret is knowing how to make it guilt-free.

Being on a diet and eating healthy do not mean giving up that sweet tooth. In fact, it is quite simple to make over a fat-filled, sugar-laced dessert. The results? Cut out the calories, the fat, the guilt, and the added pounds. And do not forget the best part of all: No one will be able to tell the difference between the healthy dessert and the real McCoy.

Below, is the recipe for Vanilla Pineapple Angel Food Cake, a sugar-free, fat-free, guilt-free slice of heaven:

Ingredients

  • 1 can (20 oz.) crushed pineapple in juice, no sugar added/ sugar-free
  • 1 package (1.5 oz.) fat-free, sugar-free instant vanilla pudding mix
  • 1 cup thawed fat-free, sugar-free whipped topping
  • 1 package (10 oz.) round, fat-free, sugar-free angel food cake
  • Fresh strawberries
  • Fresh blueberries

Directions

  1. Mix the pineapple and dry pudding mix in a medium-sized bowl, using a whisk. Blend until the pineapple and pudding are smooth.
  2. Gently fold in whipped topping.
  3. Set aside the bowl of pudding mixture.
  4. Using a serrated knife and a sawing motion, gently cut the cake horizontally into three layers.
  5. Place the bottom layer of the cake on a plate. Spread the pudding mixture evenly onto the bottom layer.
  6. Place the middle layer of the cake on top of the bottom layer. Spread the pudding mixture evenly onto the middle layer.
  7. Place the top layer of the cake on top of the middle layer. Spread the pudding mixture evently onto the top layer.
  8. Any remaining pudding mixture can be used to spread along the sides of the cake, if more "frosting" is preferred.
  9. Refrigerate the cake for one hour.
  10. Top the cake with the fresh strawberries and blueberries just before serving.

Alternatives to Extra "Frosting"

If there is left-over pudding mixture and extra topping is not desired, one option is to make cake-free dessert cups instead. Spoon left-over pudding muxture into dessert cups and then refrigerate for several hours, or until chilled. Serve and eat.

Another option for the left-over pudding mixture is to use it as a fruit dip. Strawberries and blueberries go wonderfully with this pineapple pudding mixture.

Guilt-free Dessert

With only 140 calories and one gram of fat per serving, this dessert is one to feel good about eating, no guilt required.
